I've cut way down on flour carbs, which has been good, but really craved them this morning. I had bought a box of Nature's Bakery fig bars in raspberry flavor and tried one out this morning. Pretty good! Dense and filling, although I was disappointed to find that the "bar" comes in two pieces (like a Fig Newton) and that EACH bar is 110 calories. Now I have another bar in an open package haunting me at my desk... luring me into eating it.

I put it in my lunch bag in the fridge in the break room. Now if I succumb at least I'll have to walk to go get it.

Last night I made bacon and kale for dinner, which is one of my favorite things. If you haven't tried it, it's so easy! I use thick-sliced bacon, 6 slices, all chopped up. Saute until it starts to crisp, then add at least half a bunch of curly kale, stripped off the spine and chopped/torn into little pieces. Stir into the bacon and let it get completely covered in bacon grease, then stir fry everything until it's all crisp. The kale has to be crisp! Serve and enjoy.

I use a good quality bacon so there's almost no grease, just enough to coat the kale. It's pretty fatty anyway, so this is a treat I only allow myself to do once or twice a month. I ate mine before I remembered to take a picture, but I found one online that's nearly identical.

For a hearty main dish you could substitute a pound of ground sausage for the bacon, add in chopped onion and crushed garlic, then the kale, then a can of crushed tomatoes (with the juice). Let it simmer until the liquids reduce, then serve as-is or over rice or pasta.

I also take the shredded kale, toss it with a little olive oil, and bake on a cookie sheet for about 15 minutes. Add seasonings as desired (I sprinkle with garlic salt). It's a terrific snack!

They're extremely good at moving things along in the bowel. Don't rule them out.

That kale and bacon looks bomb! I am not a kale gal (i eat tons of spinach and cabbage and Brussels sprouts) but i may have to try that!
