I feel really good today. I spent some of yesterday meal planning and grocery shopping so I know that I have what I need to be successful in the house. I washed and sliced the vegetables that would be more time-consuming in the morning before work (carrots, radishes, cauliflower) and packed them in see-through container so I can see my bounty :)

For dinner yesterday I served poached chicken thighs, corn on the cob, and asparagus with a little drizzle of Hollandaise sauce. Hubby loved it and was totally surprised when I said, "Hey! No white carbs! No bread, no rice, no pasta and yet you feel satisfied!" My Sicilian husband (who believes that bread and pasta go together like, well, bread and butter) was complimentary -- and did NOT go for snacks in the evening the way he does when he asks me to make something "light" for dinner.

Tonight was a crunchy chicken salad with cabbage, carrots, radishes, cucumber, and chicken dressed with a "lite" Asian sesame dressing. It wasn't all that lite, either -- I'm going to need to find a substitute that's got way less sodium. Still, it was really good and I didn't use that much.

On the side: Texas Toast, 2 pieces each, because we had it and it's delicious! It was a good balance with the salad.

Hubby and I split the salad and I have a small container for lunch tomorrow. My calories for dinner were 653 and 280 of that was the dressing. I've GOT to find another choice, but I still came in at just over 1400 calories for the day.

What didn't I do? I did not eat any snacks! I had them with me, and I had time to eat, but I wasn't hungry. I flavored my water with 1/4 packet of "True Lemon" and drank that most of the day instead. There are 10 calories in a packet, so I'm fine there. I didn't even finish the food I brought for lunch.

I'm giving myself 1700 calories a day, but I'm finding I don't need them all WHEN I EAT WELL. I feel like such an idiot for all the butter I've eaten in the past that just added on calories when I could have been exploring other food choices. I'm not saying "no" to butter -- I did have corn on the cob yesterday after all!

It feels good to feel good. That's why I'm doing this. I'd like to lose weight, too, but right now I just feel good and that's all that matters. No pain today, which I attribute to my food choices.

Good for you! I find doing the "leg work" makes things so much easier. The fewer decisions i have to make about food in the moment, the better. Also, check into bolthouse farms dressings in the refrigerated section of the produce section. I think they are great. You are building good habits and it sounds like your husband is game to be supportive!

Thanks! I'm not a big dressing fan, so I don't usually drown my salad, but the Ken's Lite Asian is really good. Unfortunately I had about 4 tbs and it turned into 1800 mg of sodium! OMG!!! 280 calories, too, so I can only shudder when I think of how many calories are in regular dressing. Tracking my food is so eye-opening. I did it some years ago for sodium and dropped my BP by 20 points, got off meds, and lost a little weight. Then I got lazy. Now when I look at this salad dressing calories I think, "How many times have I used a dressing like this on the side of a regular meal? " No wonder restaurant meals can be so caloric.

Okay, I feel a little lame. I read Katie's message and thought, "Now why is the Caesar so much less?" I checked the bottle again and realized I misread the serving size and input it incorrectly here. I had about half the calories I thought I did. Feeling like Emily Litella from SNL -- NEVER MIND!

I discovered WALDEN FARMS salad dressings by accident. No carbs, fats, or calories however it has the normal amount of SODIUM. I am not a person who eats diet anything but I like this dressing well enough to try others flavors. The one I originally bought was the ranch dressing. Mild flavor but definitely ranch. Now I add just a little lemon juice to pick up the flavor a bit. Their line of dressings include all the usual suspects. Since discovering this brand I have tossed out all the others in my fridge that I would normally eat. I did want to finish off my remaining bottle of Hidden Valley so just added an equal amount of the Walden Farms and cut the carbs and fats by half. I’m a happy camper.

That sounds good. I like ranch dressing, especially for dipping raw veggies. One of my favorite salad "dressings" is just plain vinegar, but flavored. I bought some blueberry balsamic vinegar at some fancy store outside of Dallas and drizzle it on my salad. It works well for me. There are a few vinegar stores near me in So Cal, so I'm off on a trek in the next few weeks. I tried a combo of jalapeno vinegar followed by peach vinegar and it was delicious!

I find that I can put 1 tbsp. of salad dressing in my bowl first and then add my veggies and stir and it will coat the whole salad. That way you only eat half of a serving as most brands consider 2 tbsp. to be a serving. Or I just sprinkle some apple cider vinegar on it instead.

I’m SoCal also—-Anaheim. Where are you. This Walden Farms also has an Asian dressing for Chinese chicken salad. Also checked Amazon and this company makes all kinds of marinades, etc.
