How do you cook this? I have eaten the soup version, and the sautéed version. But haven't found a right balance with its bitterness taste.

The only balance for bitter is sweetness. Hot, spicy, acid garlic, sweet profile.
Mustard green is a good partner with ground pork.
Blanching removes from of the bitter.
