Good morning! Yes I do! I can't seem to find where to send you a pm either! For something that should be so simple this has turned into such a difficult task!

For seitan, preheat oven to 350. Mix 1 1/4 cup gluten, 1/4 cup nutritional yeast and whatever dry spices suit your fancy in a large bread bowl. Separately, mix 2 tablespoons of tahini into 1 1/4 cups veggie broth. Add wet to dry and mix until combined. Knead dough 5 minutes -- it'll get stretchy and rubbery. Form into a log and wrap tightly in aluminum foil. Bake at 350 for 45 minutes one side, then flip and bake another 30 minutes. When you do this, clean up IMMEDIATELY or you will be hating life. I scrape off as much as I can with a metal spoon, then use a scrub brush on it. If you use dish towels, it'll ruin them because you won't be able to get the stuff out of them. A brush you can pick most of it out, and the rest will come off as you use it.

Also consider trying the vegan Italian seitan meatball recipe from the It Doesn't Taste Like Chicken website. Made a double batch this morning and they were amazing! As much protein as beef meatballs!

As for how to send a PM, you have to do it on the website on a computer. No way to do it on the app. Go to my profile and look for the envelope icon. Yep, Kenna -- vital wheat gluten. I buy Anthony's brand online.

Thanks writingwyo. I just happen to have vital gluten in the pantry. I add just a pinch to some of the breads that I make
