Not only is today my husband's birthday but it's 1 year that he quit smoking. So yeah I'm making his favorite peanut butter cake with peanut butter frosting and yeah I am so eating a piece!

Makes one 9 inch round cake:
Peanut Butter Cake
1 1/4 cup. all purpose flour
3/4 tsp baking soda
1/2 tsp salt
1/3 cup butter
1/4 c. creamy peanut butter
1 cup unpacked brown sugar
2 large egg
1/2 cup buttermilk
4 reese's peanut butter cups, coarsely chopped
Preheat oven to 350. Butter one 9" cake pan and line with parchment. In a mixing bowl cream butter, peanut butter and sugar until light and fluffy. Beat in eggs, one at a time.
In a separate bowl sift together the flour, baking soda and salt. At low-speed, add the flour mixture alternately with the buttermilk.
Combine the chopped peanut butter cups with one tablespoon of flour and add them to the batter. With a spatula mix until combined.
Spoon batter in the prepared pan and spread evenly. Bake cake until about 33 minutes or until a toothpick inserted in the middle comes out clean.
Cool cake 5 minutes. Turn out onto racks, peel off parchment. Cool cake completely before frosting.
Peanut Butter Frosting
1/4 cup butter
1/2 c creamy peanut butter
1 cup unsifted powdered sugar
1/3 cup heavy cream
To make the frosting, in a mixing bowl add the butter, peanut butter and 1/3 cup heavy cream. Stir at low-speed until combined.
Slowly add the powder sugar, 1/2 cup at a time, mixing well after each addition. When all the sugar is added increase the speed and mix for 1 more minute.
If needed, slowly add few more drops of heavy cream. Frost the cake completely.
Decorate with peanut butter cups/hearts. Keep cake refrigerated. Serve at room temperature.

I only used 3/4 cup of powdered sugar. I didn't want the frosting to be too sweet. And then I only used 1/2 of the finished frosting on the top of the cake. My husband is not a big fan of frosting and he asked me to just put some on the top. I threw the other 1/2 away. Next time I will half the frosting recipe.

if you deprive yourself too much, you're only going to want it more. MODERATION is key. It's ok to make a cake and eat it too ;-) Just a small piece.
