Home made chips! Terrific! What kind of oil do you use to fry them in? Do you pan fry them? An air fryer?
For an animal-based food crunch, I like pork skins, which is the only pork I eat. They are sometimes labeled as chicharrones. They are fried in their own endogenous lard (manteca) instead of the cottonseed oil in which most commercial potato chips are fried. I want to try making my own pork cracklins’ in a large wok, outside, come BBQ season.
Lately, I’ve been experimenting with sweet potato chips and aerosolized coconut oil in my air fryer. I haven’t found a sweet spot of time or temperature yet. I think I will next try to dehydrate them before cooking them. And in my case, I would have this as a an occasional treat, not something I would eat more than once or twice a month.

wifey i just use my fryer at its highest temp, 400°f and when theyre done they stop crackling/popping so i don't time them, i listen to them. sometimes i pull them early because i like them softer

I rinse them in cold water. Is pat them dry and drop them in individually or they stick
