Slept in! Slept in! and Slept in! Gosh ... I feel so rested after a crazy week! I felt like I was losing my mind with tiredness by end of the day yesterday. I love having a long weekend but it usually means that you have to work for it ... fitting five days work into four!
I had the most glorious meal and I feel so good right now. Following up on Draglist cottage cheese eats last week, I decided to go looking for the 4% cottage cheese (I didn't even know they made that). I picked it up in the Supermarket yesterday and for my first meal today I had cottage cheese with a little cinnamon and sweetener, emulsified with my handy, dandy, Kitchenaid emulsifier to create a smooth, creamy and tasty finished product, that I spooned over 1/2 cup of plump, juicy, sweet blackberries. I enjoyed every delicious spoonful. The most surprising aspect is how filling it was. A sweet and satisfying guilt free meal. I had all of that for under 200 calories - it will be my go to from now on.
I hope everyone is enjoying the Easter long weekend. The kids and I are going to start the packing process for the Disney trip. We are 16 days away from leaving and our Summer clothes are still packed away so we need to get our lists together. The kids need to try on the clothes they want to take to make sure they still fit and determine if we need to purchase anything else before we leave. I am into lists for packing - the habit came from my years of travelling all over the world into various weather conditions. It makes life so much simpler for me so I am getting the kids into that mode as well.

Save you trouble and buy new clothes in Disney. I do that for toiletries when I travel abroad. It is more fun. Plus they may have outgrown their clothes :-)

Sleep can work wonders! My kids hate the process of pulling out the clothes and checking to see what still fits. You should be thankful you can talk about Disney to motivate them. Have fun!

Aurora, the kids hate clothes shopping in Disney.. they buy 1 or 2 tshirts and most money is spent on the experience. My oldest hates shopping period. She does not believe in consumerism .... thinks people buy things they don't need. I call her my conscience.

Aurora: I think my daughter is like that because I was always spending too much on things we don't really need. My basement is a monument to over-consumption. I think my daughter came into my life to make me appreciate the simplicity of life - it's not about stuff, it's about creating memories. I meant it when I said she is my conscience. I was very self-absorbed before I became a wife and mother!

I think I will have to go check that 4% out, I only thought it came in the 2% which I have and I love it with fresh fruit mainly papaya.
