Hi, everyone! Hope you are well. I bought coconut oil and put it in my coffee, but most days I forget to add it. I can remember years ago when US experts were telling us not to buy any processed food that contained coconut oil because they said it was unhealthy. Said not to eat any fats that were hard at room temperature or something like that. Why are we putting coconut oil in our coffee? I could google it, but if we discuss it here, it would help us all. Shrimp 'n Slaw Marinara
Entire recipe: 289 calories, 3g fat, 770mg sodium, 31g carbs, 14g fiber, 15g sugars, 36.5g protein -- PointsPlus® value 6*

Skip the pasta -- this saucy seafood dish will kick noodle cravings to the curb... for a fraction of the carbs and calories! Prep: 5 minutes Cook: 15 minutes. MAKES 1 SERVING

Ingredients:
One 12-oz. bag (4 cups) broccoli cole slaw
1/2 cup low-fat marinara sauce
4 oz. ready-to-eat shrimp
Seasonings: garlic powder, onion powder, red pepper flakes

Directions:
Bring a large skillet sprayed with nonstick spray to medium-high heat. Add broccoli slaw and 1/2 cup water.
Cover and cook until fully softened, about 10 minutes. Uncover and, if needed, cook and stir until water has evaporated, 2 - 3 minutes.

Add marinara sauce and shrimp. Cook and stir until hot and well mixed, about 2 minutes. Season to taste!

Alternative: Steam your slaw by microwaving it right in the bag, if the package says it can be done. Then transfer to a microwave-safe bowl. Stir in marinara sauce and shrimp. Microwave for 2 minutes, or until hot and well mixed. Season to taste!

The "fresh" coconuts we get here in the midwest are rarely very good. I buycertain brands of canned cococnut milk or cream and unsweetened coconut either from the health food store or frozen in the oriental markets. From what I've read you can make coconut milk from shredded coconut. Milk is not the same as the "water".

I hope that sit in the bathtub study was an April Fools thing. I don't think that works well. Hundred years ago I swam competitively, swam 20+ miles a day. I still needed to drink lots of water!!

Someone asked about coconut sugar....sugar is sugar is sugar... it may be more natural or less refined but it will still spike your blood sugar so I don't think you can really call it healthier. To my knowledge, I have never, ever, seen sugar of any kind being touted as healthy, lol. BUT it does taste very good.

I think it also has a few nutrients if it's not the super processed sugar.

Nichole I use Chaokoh coconut milk in my coffee, it has oil in it because is so thick, it is almost a sold. The flavor is amazing and the benefits of the fat are great to help you lose weight. I have notice though that you only need to drind about one cup a day with this in it or it will slow your weight loss because it does have so much fat in it. I have been drinking this for a while now and I believe it does help with mental clarity and energy, plus the flavor is just awesome. I put 2 tbl. of heavy whipping cream with it and Stevia to sweeten. It is good to use with your almond flour in making cookies also. don't use the low fat, it defeats the purpose. Hope this helps. Glad to see you are all better now and pray you have a healthy spring and summer. Oh for the kids it is really good in hot chocolate :)

Fats are filling. I try to have 2 tbs of coconut oil every day. I put it in my coffee, tea even in my soups. Fat makes you full. It also is fuel for your body. Fat doesn't make you fat. Carbs, grains and sugars do. Plus once your body is fat adapted the fat you eat is fuel. Also fat intake helps people get into ketosis.

Oh also if you check out many paleo recipes, specially paleo treat recipes like desserts, cookies pancakes they require coconut oil. Coconut oil is a great cooking oil for plenty of paleo recipes.

Mya, coffee has anti-oxidants and researchers say it has a good effect on the memory, which is something that I need. I drink one cup of coffee a day and add 2 packets of Stevia. Stevia is a natural sweetener made from a plant leaf, so it's not artificial or unhealthy. When I remember, I add 1 teaspoon of coconut oil to my coffee. Usually I forget.

Deb you mention that researchers say coffee has a good effect on memory & that is something that you need so you drink a cup a day & when you remember you add coconut oil,but you usually forget. :D It seems to me your comment shows that the coffee isnt standing up to its supposed benefit of having a good effect on the memory.

I know some people also add organic butter with the coconut and sea salt in theirs as well. I saute veggies almost daily with coconut oil and it adds so many calories to my diet that way that I have chosen not drink it in my coffee.... I'm thinking I probably get the same benefits using it with my food than drinking it. Coconut oil is suppose to be great for memory and brain disorders as well as decease prevention, energy/metabolism booster as well as an appetite decreaser!!

My sister-in-law's mom had dementia for years and they began adding coconut oil to all of her food. She began responding again, and occasionally spoke again. The nursing home couldn't believe it.

just saw this, mad should be made..LOL I do put lots in though.. Pam, that's awesome that she is responding!! Your brain needs healthy fats. I'm wondering how many of the people who followed low fat diets for years and years, have memory problems..

Bill, just thought about it reading this post this morning. Lots of people who would now be in their 80"s jumped on the low fat/ no fat bandwagon in their 50's. I know some of my parent's friends did just that.

There is starting to be some interest in the area of good fats and neurological conditions, at least I have heard it talked about in relation to Autism disorders. AD kids have food issues anyway but I have heard several people say that LCHF diets have improved their neurological presentation as well as cut down on the weight problems they are prone too.

Both environment and nutrition need lots more research in relation to disease. Also the affects of all these chemicals both in our environment, foods and in the everyday ingredients we use like soaps and fake foods that people are subject to. I'm in my 60's we grew up with DDT being used around our homes and on our foods and many other pesticides that have been banned, lead in paint, mercury was a toy, this cool stuff to play with, asbestos in kitchen trivets, hot pads, and appliances, and as siding on homes.
