It's a bank holiday here in Spain today - All Saints Day. Today the cemetaries will be full of families visiting their dearly departed. In fact the local police have to direct traffic at the cemetary gates because of traffic congestion. Some even take picnics to eat in the cemetary - it's a really joyous and happy occasion

After my 'experiment' of drinking 2 tablespoons of coconut oil and warm water, my stomach wasn't able to digest it, so up it came. At least my other problem has also been resolved with the oil! So I have lost 1 3/4 lb this morning. I haven't logged the loss as I think it is probably temporary. Time will tell of course, but wouldn't it be great to find that this has finally kicked my metabolism.

Tried this morning to cook eggs and bacon with the coconut oil. I put a teaspoon of oil in the pan and added bacon. I just couldn't hack the smell so I tipped out the oil and cleaned the pan. Restarted cooking the bacon with bacon grease. I love bacon grease, it reminds me of days when we didn't have to worry about saturated fat. We've gone full circle since then!

So sorry you had to go through all that! (I haven't even tried coconut oil yet). Perhaps I will stick w/ low sodium bacon. (nitrate free of course!) Jen - how long have you lived in Spain? Sounds really lovely. Do you have any relatives there or did you move there for work? I have another British friend whose husband went to Spain for work, and she visited there this summer. Just curious... have a lovely holiday!

We've lived here 8 years today. Home is still the UK though and always will be. My husband (after working in Saudi for 9 years) said he needed to retire to a warmer climate (he's 10 years older than me). But I do miss the shops in the UK, I miss my two granddaughters loads more of course. Saying this, we've booked a trip to the UK yesterday, driving through the Pyranees (which had a snow fall yesterday) and hopping on the euro tunnel (which goes under the English Channel). We are going on 2nd December and back on 6th Jan. Need to get some good old English Christmas spirit this year and visit lots of my family who I haven't seen for a while. So I am planning now on how to keep focussed. From where I'm at now, I don't think it will be a problem so long as I can log on here everyday. We'll be taking my hubby's laptop with us so it shouldn't be too hard.

oh, that sounds fantastic! so happy for you!!! and yes, stay focused, and you will do just fine. Your body/mind/eyes is on vacation...your woe is not! Enjoy your time w/ family and friends though! That's what's most important (not the food we eat while visiting). You can do this just fine. You have a dedicated desire to be healthy - for you! Oh, I am just so happy for you! (I love getting together w/ family and friends over the holidays!)

Funny, my husband was just saying yesterday how he'd love to retire in Spain. Our family spent a 2-week vacation in Summer 2009 and we loved it there. We visited Barcelona, Madrid, Segovia, Sevilla, Granada. Took the AVE train whenever we could. My husband is a huge soccer fan and eating at the soccer stadium in Barcelona (over the pitch) was a highlight for him. My teenage daughter loved it, too, esp the late-night strolls, the entire rhythm of life there.

WOW Jen, what a terrible experience with the coconut oil. I personally love the stuff. We have something here called Memorial Day but people go to the Cemetery to morn the loss of their loved ones. That is very interesting that people will picnic there. I love hearing stories of happenings all over the world. A friend of mine just bought a place in Italy and I was so intregued in how different and beautiful it is. He had tons of photo's. AWESOME. See, I get to travel all over the world in photo's , but I would really like to move from Vermont.lol Hope you have a wonderful day.:)

Hi Jen, I was just looking over your diet calendar and noticed that you're having cocoa mims, which are "muffins in a minute," right? Just fyi, those mims are known to stall many, many people so you might try cutting out the mims. Also, does your cocoa contain sugar or artificial sweetener? If so, you might try experimenting by cutting that out for a few days to see what happens. Hope you're feeling better.
