Ha, you're welcome mate! Around 8 servings so 97.9 calories per serving! And SO tasty and healthy.
Fry carrots, onions and celery together at a low heat until softened (this takes a while). Add tomato puree and finely chopped garlic and cook another few minutes.
Add 2 tins of chopped tomatoes, add the stock (I use homemade salt-free vegetable stock) bring to the boil and then simmer until everything is soft and gorgeous.
You can customise the cabbage part. I like cavolo Nero but it's expensive so I use sweetheart cabbage usually. Sometimes kale.
It's delicious and I always make double for the freezer!

Nice soup Sammy 🤟 I love soups like this, today I cooked one but its 28 cal per portion. Those soups very good for the special needs time. Sneaking to the fridge after 10 pm some time to kill the hanger 😁
