Okay today I have swapped round my roast dinner from my usual Sunday, as I realised last week that I had a habit of eating way way way too much the evening before I weighed in...

So today I had (raw weights):

2 chicken breasts (270g)
200g carrots
360g squash
100g broccoli
200g sugarsnap peas
7g bisto best
1 chicken oxo
3 Yorkshire puddings (pre-made)

Total calories: 732

I roasted the chicken breast on a bed of the carrots (with the chicken oxo and black pepper to season) in a foil parcel with the squash roasting open next to them, on 180C, for about an hour and 20 minutes.

I nuked the peas in their pack for 2 minutes, then warmed the plate by nuking it, then when I added the Yorkshires to heat through I nuked the broccoli and peas for a further 3 minutes. Removed the chicken parcel from the oven and poured the juices into a cup with 7g of bisto best to make the gravy.

What I will do next time:

I didn't need more than one chicken breast. So next time I will either just buy one or will save the 2nd for another day.
I didn't need 3 Yorkshires, 1 (or 2 at most) would have been sufficient. But I do love a yorkie...
The chicken should not have been cooked on the carrots, they were just cooked after an hour and a half surprisingly (still had bite to them).
I thought adding a heaped tsp of bisto best would thicken the tiny amount of gravy I needed for just me. I was wrong, it had b****r all effect I would have been as well served just using the juices from the foil parcel on their own.

Even if I just cut out 1 Yorkshire, one chicken breast, and the bisto it would would save me over 200cal off that total. I could have been deeply disappointed by a weight watchers frozen dessert for that!!! ;) :lol:

Sounds delish! I'm impressed with you cooking yourself such a fantastic meal. If I cooked for just myself I wouldn't have that much ambition. You're doing great preparing foods and changing things up. Amazing!

Well I do run a foodie message board you know. :) That's one thing about the last 8 months I dislike. I've eaten way to many ready meals. Mostly though sheer laziness. Not because of the cooking but because of the adding up calories. I can cook is one of my pleasures in life and should remind myself of that more often!

No I didn't know. Funny you used that word; I thought to myself grocery shopping 'what a foodie I'm becoming now that I actually think about my food instead of ringing the piazza guy. I'm thankful for my foreman grill - otherwise I'd likely microwave my chicken. I do use my slowcooker a lot.

Mmmmm yorkies lol. I love my veg just cooked so they still have their bite. Pet dislike is mushy Brussels lol

Surprisingly the carrots weren't mushy, but they were very thickly cut. everything else was just about right.
