Fasting a.m. BS = 129; weight = 173
Too wet to walk, so I'll ride my exercise bike today. Need to go to Walmart today, but don't really want to drive 11 miles in the rain.
Stocked up on groceries I'll need for another week of Keto.
Accidentally discovered a delicious low carb substitute when craving ice cream. Sugar free instant pudding mixed with sugar free cool whip. Put in freezer. Had some leftover pudding last week and froze it because husband was out of town. Carb and calories depend on whether you use skim milk. Going to try it with almond milk next time.
Totals today: 1505 cals; 71/9/20 ; net carbs 24.10 Rode exercise bike 50 min.

Let us know if the pudding works with almond milk. I think I read somewhrre that it won't set up with almond milk but I've never tried it, but hoping it will.

The pudding did set up with almond milk, but -- I did it half dairy milk and half almond milk. At first I thought it was not thickened, but then I got distracted to do something else and it was thickened when I got back to it. So we still need to try it with only almond milk. I couldn't tell any difference in taste either, but I was using chocolate pudding mix which would have overpowered any difference in taste with almond milk.

heavy cream addition can work too, even if you water it down a little to more like milk. fat is your friend on keto. sugar and carbs in milk are not the best. did you compare fat and carbs of heavy whipping cream to the almond milk?? It is nice that you are thinking of ways to have a healthy perk.

Haven't tried the whipping cream with it, but will do so.

I would think thinned out a little it might be better tasting then the almond milk. but it certainly would be rich just plain. when I make my husband mashed potato's I always add the heavy whipping cream as he drinks skim milk and I feel that the potato's are like I added just water to them when I whip them up. the cream adds some body to the potato's if you know what I mean.
