I have been playing with some of my old recipes and making them more keto. I was converting my Italian stuffed cabbage recipe and since I did not have any cabbage to use, I decided to test my meatballs in the stuffed peppers instead.

sorry the picture is cut off, it would not let me expand it. Looking forward to seeing how these turn out.

I don't eat or should I say drink the tomato sauce I cook it in, but I included some in the recipe as I know the meatballs will absorb a little and I will use a little as gravy.

My husband who is not keto gave me a thumbs up. for myself, I am going to adjust the seasoning, it does not have enough zest for me. But it is good, just not the same yet.

I was tempted to make stuffed peppers and stuffed cabbage a while back but my laziness won out. Can I come to your house?? :D

sure you can. and stuffed peppers is super quick, the cabbage does take time. Boiling and then peeling those leaf's off is a pain LOL!
