Sharing another recipe. I made this soup a couple months ago but today I used more veggies.
Its my own recipe and I'm calling it Oriental Shrimp Soup:
Shrimp sauteed in Mongolian Fire Oil
Add green onion and toasted sesame seeds
Sprinkle 1 tsp Chinese 5 Spice and tbsp parsley flakes
1 carton low sodium, less fat chicken broth
a few dashes of soy sauce (this is why I use low sodium broth)
1 can baby corn + 2 cups frozen oriental veggies (I used Kirkland's Best)
Simmer for 30 min
Add 1/2 box Rice Noodles (I used Thai Kitchen Stir-Fry Noodles)

This soup has a nice, clean broth that is not oily at all. The heat is pronounced with just the mongolian Fire Oil. Not too spicy though - so those who are sensitive will still enjoy it!

Love your food choices, and recipes. I too cook most of what we eat from scratch and attribute our weight loss directly to "diet" food with lots of flavor. Never feel deprived that way. A favorite of ours is to roast Kirkland stir fry vegetables on a cookie sheet tossed in a spray of oil on low shelf at 500 degrees for about 15 minutes--will be a little blackened. Turn over about at halfway point. Add whatever leftover chicken or steak or shrimp for the last 4 minutes. Pour 3-4 TBSP stir fry sauce over. We don't even use rice. Just LOTS of those veggies. Roasted broccoli is also tasty as a side. I've been watching your journey and you started out a ways higher than me, but will soon surpass me. More power to you. I realize my metabolism has slowed and health issues have slowed me, but all of you encourage me to see that this can be done, even slowly.

Chefdonna, thank you! I always steam my veggies when I eat them as a side. I will be sure to try roasting!! No doubt that roasting will add so much more flavor!
