Spanish Style Chicken and Rice

Healthy makeover of a delicious one-pot dish.

Ingredients

Directions

  1. Prepare rice as directed. Sauté onion and green pepper in olive oil until tender.
  2. Chop chicken breasts into bite-sized pieces and then add to green pepper and onion. Cook until done.
  3. Add 1 packet of Sazón seasoning (found in the ethnic foods isle). Stir in rice and tomato sauce and allow to warm through.
  4. Top with diced avocado and sour cream. Enjoy!
