Spanish Pork Chops with Rice

Yummy and easy to prepare pork chops.

  1. Combine rice, water, and tomatoes (like Ro-Tel).
  2. Place pork chops in baking dish.
  3. Pour rice mixture over chops.
  4. Cover with foil and bake at 400 °F (200 °C) for 1 hour.

I used thin-sliced center chops, baked at 375 for 20 mins a side. I omitted the rice and served this with a Spanish Rice recipe I found here on fatsecret. The chops turned out a little too spicy but the rice really balanced it out. Yummy!

I think it's funny that you can add rotel and call it spanish pork chops. We tried this recipe last night, I'm SOOO glad that I seasoned the pork chops..the rotel with the rice wouldn't give the pork chops enough flavor. The hubby and kids did not like the rotel with the rice. It was really easy to make, hopefully I can find a way to tweak it. Great concept.
