Cajun Style Beans & Sausage
A wonderfully, delicious Cajun-style sensation of beans and sausages.
Ingredients
Directions
- Beans should be soaked and rinsed (ready to cook).
- Dice onions and green peppers. Sausage should be sliced and quartered into small pieces (about 1/2 - 1").
- In a large pot heat the olive oil over medium heat.
- Add sausages and cook for 3 minutes.
- Add onions, green peppers, and remaining ingredients and cook for an additional 5 minutes.
- Add crushed red pepper or more salt to taste.
- Add beans to pot and fill with just enough water to cover everything and bring to a boil.
- Simmer, cover, and cook for 3 hours or until beans are soft. Enjoy!
