Bacon should be cured with salt and then smoked. The nitrates help preserve commercial brands in the store, so you're more likely to find non-nitrate stuff at local whole foods, farmer's markets, stuff like that. And like you found, some larger chains are stocking the stuff too. If you keep buying it, they'll keep stocking it, so eat up
