I'm not an expert either, but are you sure you are eating enough?
I don't know you, so I really can't judge, but 1200 cal don't seem a lot to me, and I can personally tell you that I have been stuck with a certain weight for a long time, even though I was eating way less than I am now and that a few friends of mine ended up slowing down their metabolism by eating less than they should have and needed to go on always stricter diets to lose weight.

As Kishlette said, try to calculate online your Basal Metabolic Rate (I made an average between what seemed the most reasonable results) and I really think you should never eat less than that, always at least a little bit more. And yes, absolutely log everything: I had never realized how many calories I was taking in by adding a little bit of olive oil here and a bit there etc.

I am not following my diet as much as I should (I had unexpected guests for most of this week), and I am still making adjustments, but I found myself losing weight quite easily and w/o feeling hungry at all. Eating proteins at every meal, together with carbs and fats helped me feel fuller, as did eating a bit less but more often, so try to find what works best for you in this sense.

As for carbs, I am eating less of them, but I am focusing more on their calories and making "smart" choices: 100 gr of pasta provide you with about 350 calories, which equals the calories you'd get by eating more than 2 kilos of zucchini or aubergines! My usual serving of pasta was about 100-120 gr, and it was paired with sauce/vegetables/etc, whereas I need way less than 2 kilos of zucchini to feel full.

Needless to say, drinking more water and exercising can be of great help, as can sleeping enough.

I don't know if I am telling you things you already knew, I hope you can get some new ideas and I wish you the best of luck! You just need to find what works for you by experimenting, you can make it! =)
