I was so disappointed today! Sunday I put fondant on five tiers of cake dummies for one of my competition cakes. I used purple. I had gotten coloring at Hobby Lobby and they changed their brand. I have very little room in my house so had them on a temporary table by my door, with the blinds open. The sun hit them and the all faded to a blue gray. Tomorrow I have to go get different coloring that hopefully won't fade, and remake all the fondant and recover the tiers. I'm already behind! But praise God, cause I was having some trouble with that fondant being dry and not entirely happy with the cover as it was not all that smooth. Now I can make some changes to that recipe and hopefully get a smoother finish, and maybe a better color. I am running some color tests before I recover as it will be in fluorescent lights at the show which can also fade colors. If my tests fail I will have to choose another color and I don't really want to do that. I will do what I have to though! Stress is high from now until I finish all my entries!

Weight is actually up a bit, probably because of the increased salt. But the cramps are significantly reduced.

He protects me and makes my challenges much smoother than they used to be before I could trust Him.

I had two doctor appointments this week. Thursday was with my primary care physician. Two weeks ago she had run blood tests to compare with the April tests. My A1C was 5.7 compared to 8.1 in April. She was very happy that I got that down with diet changes and not taking medication. My cholesterol was also down. She would like me to increase my good cholesterol with more fish oil tablets. My red blood cells, kidney and liver tests were all high. But since other tests show no problems she think it could be my normal because of my ileostomy situation. She does want an ultrasound of my liver to eliminate some things.

My other appointment was Friday with the kidney doctor. Again he told me to eat more salt. I do drink a lot of fluid, but he says it goes right through me because of my ileostomy. Greg and I were talking about that, (and both drs were concerned with my cramps) and we realized that we used to eat so much processed food and fast food, and it was full of sodium. Now even though I salt everything heavily, its not near what I was getting before. The kidney Dr said I should eat chicken noodle soup, but I said I'm not eating carbs so can't do the noodles. He also suggested tomato juice from V8. First I hate tomatoes and tomato juice, plus its got a lot of sugar. So no to that, but I did get some chicken base that is pretty high sodium and will have to add two cups of broth to my diet each day. Hope that helps.

Dayberndt, I wanted to let you know that I finally made mashed turnips, and rutabaga fries. I almost backed out because I couldn't stand the smell from peeling them, but I really liked both items! I wish the fries were crispier, and might try double frying next time. I add so much to the mashed that it tastes great! I hope to finally have a garden next year and will add both!

One cake almost done. I may stay up tonight till I finish it. Its the smallest and I have a lot more to do by Oct 2!! ACK! I'd post pics but I can't until after they have been judged because of a chance that some judge could see them before hand. I think the next couple of weeks will have some very late nights.

God will give me the strength I need to make it through, and grace to not bite my husband's head off! lol.

Wow, just wow! Been a tough day, but first: We have come up with a yummy breakfast! I freeze strawberries so they last longer, so I take about 8 frozen strawberries, an Atkins shake, some MCT oil and/or coconut oil, and add a bit of sweetening. I mix in my mini ninja. Oh my gosh! Its like a yummy shake or a soft serve ice cream! So yummy and pretty low carb! Its filling!

Next, last three nights have been very little sleep. Last night was a bit better, but I've had serious cramps all night long. I get up several times a night to try to walk them off. I might be getting 2 hours sleep, but not all at once. I've upped my fluids and potassium. I'm also worried that some of my weight loss is because of dehydration. Hopefully tonight will be better. My legs are so sore now, they feel like I've been running for hours. Wonder how many calories get burned walking off cramps all night.

Then, today at work was pretty much awful. Because of the holiday, processes that usually get run over three days time had to all be run between last night and today. Last night I started the first process. Almost thought I wouldn't be able too because we had storms and I lost internet, but almost 9 pm I was able to start. This process takes 12 hours and is usually run during the day. Well since I was up anyway I could check the logs all night to make sure it was working right. I had people messaging me two hours before it was done if I had the other processes done yet. The first one was ok, took a bit of time but the second one I had never done before. The directions were completely different, nothing was automated, and I had made changes to some of the process. So many things went wrong and it took all day to fix, but now I know how to make it better. There were parts that had to be done that weren't in the instructions. Of course the other team had to work late verifying everything before sending it on to the client, and I feel bad for that, but my team lead is on vacation and tried to get them to agree to run these over three days rather than one. Oh well! God has seen me through and helped me to make it through and learn a lot. I am blessed. Tired, but blessed.

And the work I've been trying to do on cakes? Not getting as much done as I would have liked. But maybe tomorrow I will. I did have time to make homemade chicken stroganoff over steamed broccoli though. Yum! Time to go to bed and try to sleep, and tomorrow is a new day! Have a blessed night everyone!

Some have expressed concern cause I hadn't put in an entry for a bit, that maybe I was bothered by some comments. No, I appreciate the concern but that hasn't been it. I was upset for a couple of days and God showed me some mighty things that I will share later, but really I have been especially busy with work, and every spare moment is working on my cake entries for the Oklahoma State Sugar Art Show, one of the largest cake shows in the country. I have a minimum of 5 entries I am working on an have until October 3 in the morning to finish. Plus my computer works slower than I do and waiting on the computer to catch up with the speed of my typing is very annoying! I don't even have time for walk now, or much of anything else. We did spend Sunday after church with some of the family. Husband smoked some awesome ribs and brisket! YUM! Otherwise I'm not eating very much. I get to busy to eat and forget! I also forgot my meds yesterday morning with the potassium, and was up several times during the night with severe cramps in the legs and feet. Extra potassium today! Hope everyone is having an awesome holiday! Off to fondant several Styrofoam cake dummies!
