Needed a quick LC high fiber recipe to meet my challenge goal and ran across this muffin in Pinterest. (How did I survive before Pinterest?) My husband even liked them!
High Fiber Muffins
Makes 12
1 c. flax seed meal
1 c. oat fiber (If you've never used - get some!)
8 TB heavy whipping cream
4 lg. eggs
4 TB butter
4 TB Erythritol
1 tsp. baking powder
1/2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. vanilla extract
1/4 tsp. salt
Melt butter and combine with Erythritol. Mix all together. Dough will be thick. Spray (or whatever you do) a muffin pan. I used an ice cream scoop to make muffins even. Bake at 350 for 15 min. (I used glass canning jars so mine took 3 min. longer.)
Recipe says .6 net carbs but My Fitness Pal brought it in at 2 net carbs.

Today is LC Tortilla making day! I am trying to get my favorite staples made and in the freezer so I have no excuse to not follow my plan. It feels good to be enjoying this again. I remember when I first started eating LC years ago I had such a good time. I had to learn everything and totally enjoyed it as I was losing weight and full of energy. Then I a doctor mess with my head and told me LC was going to kill me and I should only eat low fat and maligned everything I tried to do. Well, I had done that for too many years to count and all it did was make me fat and tired. But it really messed me up. I still have a few people in my life that are trying to give me that same old message but I'm just not listening. I have the energy to exercise every day! I love cooking again! Why would you give that up? I cooked one tortilla very crispy and made a few taco chips. We are going to Taco Tuesday tomorrow so I can indulge in a little salsa!

Starting over once again. Spent all summer moving then right into my daughter's wedding then holidays. All poor excuses but it is what it is. I went to a KETO class last week. It was horrible. The instructor was a little too much for me. But the positive outcome of it was it got me back on track and I'm eating like I should be and exercising again. And I'm enjoying cooking. I've had several episodes where I let others really mess with what I'm doing and I end up hating it all and go off the rails. I am back in a good place and am really enjoying what I'm doing. I'm even logging my food, something I haven't done in years. I hope to keep going forward.

I had a fairly good week. I started exploring the greenspaces and walking trails in my new neighborhood which is a great way to get the lay of the land. I've experimented with some new recipes and dug out some favorites I haven't used in a while. My house is still a disaster with packing boxes everywhere but it is slowly coming together. My goal for the coming week is to get more exercise.

I spent the last 3 months either moving or getting my old house ready to sell. I ended up going far astray from my WOE. It was a matter of survival. I had 2 houses and neither kitchen was functional. Things have begun to settle down. The old house will close in the next couple weeks and the new house has a workable kitchen again! My body did not do well on the high carb meals I was eating all summer. As usual I ended up with a lot of pain. I will say, it was a lot easier to just go out and grab something though. It takes a lot of work to live a low carb lifestyle. But I am enjoying having a larger, more up to date kitchen. It makes cooking for so much more fun! Today I was able to get out and explore the new neighborhood. There is a series of paved trails running throughout. I think I'm going to like it here.
