performance: gaining 0.3 lb a week

I am a 53 year old single male. I have two daughters, both in their 20s. My youngest lives with me. Two of my favorite hobbies are baking artisan bread and brewing home made craft beers. I gained almost 75 pounds over the last 8 years because I was eating too much bread and drinking too much beer. I've always been active because I live on a blueberry farm and raise chickens. I am also an avid mountain climber and mountain biker. I traveled to Colombia to climb in El Cocuy this past summer, and got a hernia because I was too fat. My mountain guide suggested I find a new activity. It was humiliating, a waste of a terrific amount of money and depressing. I vowed to return to my old weight of 190 lbs before next summer.

I am an architect and a university instructor. I work alone from my home office for approximately 6 hours per day 6 days per week. I teach an architectural design studio 2 days per week at a local university. I love my work and my lifestyle, but I am going to stop baking and brewing until after I reach my goal. Even after that, I will never return to my former level of involvement in those hobbies and plan to bake and brew only for special occasions. I love to draw and paint, make furniture, write, and learn foreign languages for travel. I speak English (native) Spanish, Portuguese and I am learning French.

Need ideas for more PROTEIN please!
Whey protein: the shake mix I use is 1.5g total fat, 9g carbohydrates and 30g protein per 42g scoop.

From my experience, and at the risk of confusing via simplification, lowering carbohydrate intake lowers available glycogen and increases production of ketones, which leads to blubber loss--as long as dietary fat intake is sufficient. This is because too much protein will be converted to glycogen if there's not enough dietary fat to maintain production of ketones. Here's a link with a more in depth explanation:
