I am a 66 yr old male who is diabetic and insulin dependent. One of my goals is to get off of or at least drastically reduce insulin usuage.
Can't be good for you long term. I am a retired beekeeper (alas, no more honey - too many carbs) who likes to cook very much, and obviously eat also. Another thing to learn is portion control. I am collecting recipes for the impending diet - hope to have about 30 for rotation. Check out my cookbook, there are some good ones there already. Best of luck to everyone.

Then we will see
Actually if I can become free of insulin usuage at almost any level that's going to be the first criteria.

Low-carb flour alternative
I have used the Carbquik, but not the Carbalose. The Carbquik will make decent biscuits, but forget light and fluffy. They taste ok though, and probably taste better the longer you have been without bread of any sort. I made some flat bread from Lindas' Low carb Menues and Recipes (good web site for many low carb dishes) and it was very good. Of course I changed the recipe a little, but what cook doesn't, esp. if you are like me and have made your own for the last 30 years. I am diabetic now and can't eat it, and it was one of the first things I missed. If you get some Carbalose and use it please post or write me about it, I'm curious. Best wishes

Down 25 lbs in 30 days so far
As I understand this - they shoot you up with the hcg - and then put you on a 500 cal a day diet. It doesn't take a rocket brain to figure that you can lose weight on that amount - of course, a lot of that is muscle mass. I wouldn't touch this one with a barge pole.

Powdered Soy Protein
I use micro filtered whey from The Protein Factory. Very good stuff with no carbs and really clean protein. I get mine flavored with vanillia and sweetened with stevia (no extra charge) but you can get it plain if you want. 1/4 cup 90 calories and 24 grams protein.

Good Protein shakes? where can I get them?
I use protein powder from The Protein Factory. Most of the stuff in the stores has way too many carbs for me. If you get good stuff from them, you can get 27 grams of protein per 1/4 cup powder with only 90 calories and 1 gram of carb.

Nutrition Information For Home Made Meals
Nutritiondata.com has a reciepe section that you can input any food into and as long as you pick the number of servings, works really well. I have several recipes on there. For instance I make a large crockpot of chili (20 cups) using buffalo - not always an easy ingredient to find on other sites. Their range of ingredients is the broadest I've seen.
