Had a good week, forgot to record it last week but still doing good on the diet. Pretty uneventful this week. Went out to eat with a friend and the food wasnt very good. But we still had a good time. I'm going to try a low carb recipe today, its a bacon cheeseburger casserole. I hope it's good. It takes 1 lb bacon, 2 lbs ground beef, 12 oz cheddar cheese, 1 cup salsa, 1 cup heavy cream, salt pepper, 8 eggs and 2 cloves garlic minced.
Cook the bacon, set aside, cook the beef, combine with bacon, take the eggs, cream, salsa, salt pepper and garlic mix well, add 8 oz of cheese, put bacon-beef mixture in baking dish, cover beef with egg mixture, dont mix it, put rest of cheese on top, bake for 350F for about 16 mins or until cheese is crusty. Yum! Says about 2 net carbs or 3 with 1 fiber. I guess it really depends on your salsa that you put in it.

Heading back in the right direction, finally over the walking pneumonia. Glad to be back to eating right as I cheat when I'm sick. I crave comfort foods like mac and cheese and any bread. I think that was the longest I have ever been sick.
I'm having fun with a new air fryer, just got it today. Made some hot wings in it and it was really good, I highly recommend one!

Been sick, that's been no fun at all. Still getting over the pneumonia, coughing my head off and the only thing I want to eat is crackers or bread. I always crave those things when I'm sick. But at least I'm down a few lbs since 2 weeks ago.

I knew it would be up. But it could have been worse if I hadn't been sick for the last two weeks. What a holiday. No fun when your sick especially when you have pneumonia. Oh well gotta get better.

Well that was a push, no loss no gain. This week was busy. I went to the doctor on tuesday and got my flu shot, my arm always hurts for days after one. On Wed I went out with my friends from where I used to work and it was so much fun! I had wings and 1 onion ring and 1/2 a fried pickle, didn't like the fried pickle after all. The onion rings had a weird spice in the batter so wasnt too fond of that either. On Thursday I cheated. Went to Dollywood and had the cinnamon bread and a buffet with all the carbs. Felt like crap the next day but back on track Friday to feel better.
I have signed up for a new craft show in January so I have to get back to more embroidery. I did a new kitchen towel on Wed that is just too cute! Picture below
