So, I'm off work today, so I decided to play around with six beautiful large mushrooms I had. Took out the stems, placed some cheese in the hole, and baked them for about 7 minutes on 350. Meanwhile, I mixed up 1/2 ripe avocado with a pouch of Starkist chicken (lemon pepper) and some pumpkin seeds. When they cooled a bit, I filled them with the mixture and topped them with a sprinkle of chia seeds. Sliced some black olives on top. Lunch for 3 days!

Had an early breakfast with my son at Waffle House. Two scrambled eggs, 4 slices of crispy bacon, coffee. Lunch before work, BIG green salad with grilled chicken, cherry tomatoes and half an avocado. A few walnuts, cashews, and pumpkin seeds. Sprinkle of flax and chia seeds and creamy avocado dressing...This will indeed be all I eat today.

Just flat out stole Draglist's breakfast idea of putting some leftover cooked hamburger (from tacos) in two eggs! Great along with zucchini, yellow squash, and onion, fried in real butter. Hot green tea, and off to a very busy day at FL. I have so much energy I can hardly believe it myself!

Today's breakfast, one Morning Star Veggie Burger fried in butter with my usual onions and peppers...then threw an egg in the pan, voila! Passion fruit hot tea with Stevia, and I'm off to work!

So, today's breakfast was 1 egg, onions and peppers, 1/2 avocado and some black olives. Had a piece of crunchy oven baked cheese alongside. Some hot green tea with Stevia, ahhhhh. And, yes, those little chocolate cheese balls rolled in pumpkin seeds were good!
