Hubs and I celebrated our 15-year "engage-iversary" on Friday night. Yay! :-) Cocktails were involved, as were large quantities of shellfish. And then a fancy dinner with friends on Saturday night ended with luscious deep-fried beignets all covered in powdered sugar.
You will notice that I haven't recorded any food this weekend, partly because it's too hard to judge the calorie and carb count, and partly because I just can't face it. FS is nagging me to weigh in, too, and I don't wanna do it and don't wanna know. Argh!

Miss Meringue, Miss Meringue, you are a seductive temptress!!!
I had in mind to make life easy on myself and bring low-carb goodies for the work potluck today, but I didn't have the time or inclination to bake something from scratch. So, clever girl that I am, I thought, "Well, how about meringues? Meringues are egg white, and egg white is protein, and protein has no carbs, so those should be perfect!" Well, not so much.
Highly dee-licious "Miss Meringue" brand mini-meringues work out to a mere 10 calories or so each, as a serving of 11 (according to FS) or 13 (according to the package) has 110 calories. All well and good, except that those calories are all sugar! The proportion of sugar to egg white is such that a serving provides 25 or 27 grams of carbs for every 1 measly gram of protein. Next time I'll read the labels carefully on all the different varieties and pick the sugar-free version. (All the Miss Meringue flavors are fat-free, except for the chocolate chip ones.)
To top it all off, I missed the potluck! So now I'm finding it all too easy to binge on the things. To save myself, I will take them down to the Help Desk and let the young and scrawny technicians feast on them.

The older I get (heh :) ), the more of a challenge it is to make party food! This friend is lactose-intolerant, that friend is gluten-free, these friends are diabetic, that friend can't have salt, etc., and I love them all and want to feed them right. Good thing I like a kitchen challenge!
What brought this up is that I need to bake some low-carb goodies for a potluck party coming up at work. This will take some thought, because most of the recipes I'm finding online are just regular recipes adapted to use Splenda instead of sugar. I don't mind a packet of Splenda or other sweetener once in a while, but I'm not crazy about baking with the stuff. Maybe I should just get over it? (Also not a fan of stevia -- it tastes weird to me.)
Trying for a no-carb day today, at least until quittin' time. My sewing circle meets tonight, and as usual there'll be all kinds of carb-a-licious goodies there, so I intend to save all my carbs for that!
