The older I get (heh :) ), the more of a challenge it is to make party food! This friend is lactose-intolerant, that friend is gluten-free, these friends are diabetic, that friend can't have salt, etc., and I love them all and want to feed them right. Good thing I like a kitchen challenge!
What brought this up is that I need to bake some low-carb goodies for a potluck party coming up at work. This will take some thought, because most of the recipes I'm finding online are just regular recipes adapted to use Splenda instead of sugar. I don't mind a packet of Splenda or other sweetener once in a while, but I'm not crazy about baking with the stuff. Maybe I should just get over it? (Also not a fan of stevia -- it tastes weird to me.)
Trying for a no-carb day today, at least until quittin' time. My sewing circle meets tonight, and as usual there'll be all kinds of carb-a-licious goodies there, so I intend to save all my carbs for that!

Well, so much for my no-carb day. One of the guys at work is about to become a father, so we surprised him with cake and coffee. Being the easy-going marshmallow that I am, I, um, didn't say no to the cake. Guess I'll be chewing celery at the sewing circle tonight!

Just pulled myself up short: Why am I giving myself a hard time for eating the cake? Yes, it was a lot of calories and carbs in one fell swoop, but look at what I did right! (1) I had thought ahead and "budgeted" for treats today. (2) Even after the chocolate cake, I'm still well under my RDI for both calories and carbs. (3) On the diet I'm on, there are no "bad foods". My goal is not to deprive myself, but to achieve a healthy balance. (4) I am not "good" or "bad" based on what I ate or didn't eat. If I choose to eat chocolate cake to celebrate an impending blessed event, then I choose to eat it joyously!

I did *not* eat celery at the sewing circle last night. In fact, no celery was present. ;) I stuck to low-carb-ish things like meringues, jello, and dark chocolate, and still squeaked in under my calorie RDI, even if I did bust my carb RDI wide open. And I had a ton of fun!
