I'm not sure how a calorie deficit of around 6100 for the week adds up to less than a pound lost, but that's apparently the way it works for me...

Because many other things factor in to weight loss besides calories in/calories burned. Your body is made up of 60% water weight. If you have a sodium rich meal one day, you can be up on the scale the next from bloat/water weight. If you exercise hard and your muscles are sore, they retain water to help them heal and it can show on the scale. Weight loss is also based on your sex, genetics, activity level, current weight, muscle to fat ratio, etc. Medications, sickness and many other things factor in too. So say "Whoo Hooo" I lost and every pound will get me to goal. Great job on your loss!
