Discovery: I not only have to eat low-carb, I have to stay under 1000 cal. When I go over 1000 cal, even though I'm still spilling ketones, I gain weight.

Well take a supplement. Women can't get all the nutrients their bodies need under 1200 a day. Your body should naturally burn way more calories than that every day by just moving all day. If you train your body to lose on low calories, then when you eat more, you will show gains till your body gets used to more calories. So many things factor in to the scale, hormones, exericse, sodium intake ,etc. It can make it difficult to know what is actually causing it to go up. But if you are comfortable eating that way, then just make sure you are getting the proper nutrients. If you don't exercise and can, start. It can help burn more calories to make the diet easier. It will also help when you get to goal so you can eat more and stay the same weight. Good luck!
