Well I tried to recruit my husband to Low Carb eating because he wants to lose 20 lbs. We talked about it last night, and then he wakes up and cracks open a can of Coke! I myself did great yesterday. One day at a time...Had chicken salad atop garden salad, beef tenderloin atop garden salad, wings and went out to hear live music so I ended the day with Jameson on the Rocks! Today I'm staring with eggs and coffee... Dreading dinner because I am low on groceries, or at least it would be hard to scrounge up a good low carb meal. Defrosting pork loin, but feeling "kitchen lazy." Maybe I'll go pick up a rotisserie chicken.

I had meat sauce over green beans which makes an ok pasta swap if you use your imagination. You sound like you are doing great.

My low carb, high fat dinner is pizza toppings minus crust. Mozzarella, green onion, feta, black olives, mushrooms, salami, peperoni with 2 tablespoons of melted coconut oil drizzled on top with crushed red peppers. Also side salad w/ bacon, lil cheese and ranch dressing. But that is all for tomorrow because today I am fasting today.

I'm aiming to pick up a couple steaks and veggies. I use a sugar-free seasoning on the steaks, cook the steaks in grass-fed butter in a pan, then when I remove them to "rest" I cook sliced-up veggies in the "leavings" in the pan. Soooooo good. Best with mushrooms and zucchini, since they soak all the juices and spices up. I love just picking up a rotisserie chicken! Just toss some veggies with oil and spices and roast them for 20 minutes to easily serve up a full meal.

Thanks everyone! I went with shrimp tacos with homemade cheese taco shells. Stayed low carb but definitely went over in calories! (I just had to snack on Hebrew national hotdogs!)
