Weigh in day! Guess I did ok. Down 1.6 lbs. I got to move a lot yesterday and the day before which helped. And I was able to eat what I wanted instead of what Hubby wanted. (He went to Taco Bell but I ate a home. Much easier.)
I kept to my diet but I seemed to want chocolate this week. I had a bag of York Peppermint Patty minis, only had a few left and wasn't going to get any more. But I unfortunately mentioned that I was almost out to my Hubby and he came home with 2 bags day before yesterday. I haven't opened them yet but I'm sure I will in a day or two. Nice thing about those is you can eat 3 and only have 150 cal/3 fat, and I feel like I'm cheating. They're so good. But I just realized reading the back of the packages Hubby bought me, that these aren't minis - they're "snack size"...a little bigger. So one is 60 cals/1 fat. Carbs are less, too. Wonder why.... hmm.....

It's getting chilly here and I'm wanting hot food instead of my summer staples: cottage cheese, cantaloupe, fruit, and salads. I'm going to have to find some hot things that I like and aren't filled with salt. I bought several packages of ramen noodles and never use the seasoning packet but they're pretty high in carbs. I want to buy a spaghetti squash and add spaghetti sauce.....that's always good. I have veggie burgers but they have sodium, too. Wish they'd quit putting so much sodium in things. :( I'm not big on soup and most have way too much sodium in them, too. I like easy things that don't take much work for lunch. Not a big meat eater but I do like chicken. Just not the price and the time to cook it anymore. Getting lazy, I guess. That's why it's so much easier for me to lose in the summer than in the winter. I always want comfort food now. Any ideas? I'd appreciate any suggestions. We're having chicken tonight. I add my own salt free bread crumbs and bake it in the oven. Very good and good for me.

Take care all! Dee

I know what you mean about cooler weather and comfort foods!! I usually start to make soup about now. I love to cook, and I know what is going in it. My problem is, the hubby just loves my sausage gravy, and he will specifically ask for it!! Lets just say that I haven't figured out a lo-cal way to make it and have it taste good!! I figure it this way, when I do make it, I'll only eat a little and it would only be one day, so no big deal. I can never make a small pot of soup though, lol!! I told the hubs I need more canning jars, and if I make soup, I will can some of it, so that we have it, instead of freezing it. Wish I could give you some suggestions, but I'm at a loss right now. I just can't think of anything!! I know someone will pop in with some good ones. And hey, I have a spaghetti squash on top of my fridge right now. I was thinking of making lasagna with it, or a pizza. Hmmmmm....

I'm not a big soup maker but I made one a few weeks ago that was very good. I poured a whole container of chicken broth (you could use a low sodium one) into a pot and brought it to a low boil. Then I put in about 5 cups of fresh broccoli. I let the broccoli cook in the broth until it was very tender. I turned off the heat and let it cool a little and then put it in a blender to blend it into a puree. Then I returned the pureed broth/broccoli to the pot and I added in a little garlic powder, pinch of dried basil, a splash of Tabasco sauce and salt and pepper (again you could skip the salt or use a yummy Mrs. Dash blend). I reheated it at a simmer about 5 minutes to let the seasonings blend in and until hot. It made a great broccoli soup!

Thanks, Lu and K. I do make home made soup but haven't yet. (Canning it would be great!) I like it with lots of stuff in it, not brothy....more like stew. And I've already made chili. Your broccoli soup sounds delicious. I love that stuff but usually stay away from it because of the calories etc.... Maybe I'll try yours. I'm drooling right now.
