Ok. It's March. Nasty February is over. Time to get back to normal and get out of this slump. With everything that went on in February, plus the yucky Pittsburgh weather, I put myself in a downward slide. Well, I hope it's true what they say when you feel like you hit bottom. Nowhere else to go but up.
Lent is here, and what a better time to use my Catholic guilt (joke--don't mean to offend anyone) to keep me on track. I am cutting my meat consumption down big time. Giving up Doritos and soda. Unless it's ginger ale and I have a belly ache. Works everytime.
Everytime I eat meat lately, it really makes me sick. The other day, while cooking supper, it really made me gag to smell chicken cooking. ***Nope. Not pregnant!!!*** Would really love to be though!!! So I'm looking for protien alternatives----that actually taste good!!! Fish has been good to me, but I am concerned about all the stuff they say to watch out for, like mercury. Any suggestions for a meatless meal for a family would be greatly appreciated.
I hope all of you are doing well. Sorry for my absence. I promise to keep in touch more often and drag myself out of the dark holes aka my covers. I just need some sunshine and warm weather, and I'll be fine.

Vegetarian chili is a good, wholesome winter meal. You can add a variety of beans for protein and tons of veggies (peppers, zucchini, onions, grated carrot, even cabbage - I sometimes throw in some coleslaw mix).

Sorry. No tips for meatless protein. Are you buddies with amryk? She is a vegetarian. Maybe she has some recipes in her cookbook. Great FS pal of mine! Take care.

I really like the Morningstar Farms "chicken" and "bacon". Made of soy but I like them. Cheese and eggs are other great protein sources. A quiche made with skim milk is a favorite here using the cheese, eggs, broccoli and onions for instance. You can even make it crustless if you prefer. :)

Yep, I'm a veggie! Non-fat dairy, eggs (or just egg whites, if watching cholesterol), nuts (in moderation), beans, Morningstar Farms Links, Strips, and burgers of all kinds. Boca burgers. Quorn Naked Cutlets. I do have a few recipes in my cookbook, but not many. I'm getting ready to make the Black-eyed Peas and Kale dish.
