I'm back again -- Just completed my first week wheat free only this time my husband is on board too. I've lost about 2 lbs since last week which is great but I've got a terrible cold and my craving for comfort food is fierce, but I'm holding strong! Need to get back on track walking/exercising daily too. Got a lot going on over the next few weeks but I will find the time! The benefits of going wheat free and keeping a low carb, low refined sugar diet are many, especially for me. My doctor wants me to go on a statin for cholesterol and on metformin for sugar (type 2 diabetes). Both of these conditions can be completely reversed by a real lifestyle change with respect to my eating habits. I would consider my husband and I foodies so this is a real challenge. We love cooking and we love eating; and we have spent our entire lives eating wheat based products and carbs/refined sugars! It's not impossible to change but it's not quick and easy! Each day is a challenge figuring out what to have for each meal...the keys are going to be to plan, think creatively and be positive! I know we can do it. More than anything I want to reverse my diabetes and bring down my Triglycerides and cholesterol. Losing weight will be a nice side benefit, but at this point even if I don't -- if those other 2 things happen I'm happy!
