Not unexpected. Walked only last night (3.8 miles), ate relatively late. Let the day get ahead of me and didn't stop to make real meals. No substantial veggies during the day but I did get in fruit. Need to refocus today. Probably need to do a go back on the food log to make sure I captured everything since I didn't do that live either. Good example of what not to do for me. This is another effect of quarantine life for me. I don't have tons of fresh veggies on hand. If they're not fresh, it's much less appetizing for me. I need to learn to plan better and maybe work in some frozen stuff since the two week Costco plan is too long for spinach and my other favorites.

I know it doesn’t look as appetizing but frozen vegetables are reported to be more nutritious than Fresh because they are Generally flash frozen at the time of harvest compared to fresh vegetables that could actually be 2 to 3 weeks old in the store produce section. Of course I never consider myself the scientific Internet resource expert of anything. I just know I read that years ago and it’s how I’m manipulate my mind to think about vegetables. Being here alone if I try to buy too many fresh vegetables they will go bad before I can consume them. This wasn’t so much an Issue when there was a market one block over that I could go to every day but now with limited access and shopping... Well, you know. I do prefer Frozen over canned. Sorry for rambling on. I don’t comment much here on other people’s journals these days and I guess it all caught up with me on yours. 😆😆

I just need to get over it and eat them. I'm spoiled. I'm pretty good at portioning out my purchases, but it's usually weekly, not bi-weekly. I also didn't plan my day well yesterday which didn't help. Are refried beans considered a canned vegetable? Because I do like those.

You are correct about frozen veggies and fruits being picked when ripe. They are more nutritious. Many fruits and veggies sit in the produce aisle green and under ripe. The majority of the produce I purchase is frozen. Some things I do purchase fresh but never more than we would consume in 7-10 days. The only canned veg I purchase is crushed tomatoes, garbonzo and black beans. But my preferred legumes and beans are dried and just have a few canned on hand as backup quick meals. Frozen are also cleaned and trimmed which is another bonus.
