As I take a quick break, from the video I'm watching, I wanted to comment on a recent revelation that occurred to me during my journey through this battle of the bulge I'm on. When I first began, I found it difficult to get in enough veggies, before topping out, on my RDI for the day. I'm now finding that the pendulum has swung in the opposite direction. Though it's easier to remedy this problem, I've been topping out on my net, veggie, carbs, before getting in enough protein. I've, of late, been adding veggies to my breakfast scrambles, and sandwich wraps, using low carb tortillas of course, and today I even put some thin slices of zucchini on my LC pizza, along with the pepperoni, onions, and mushrooms; very tasty. This kind of blows the, common, misconception that the Atkins woe is all about meat, out of the water completely; as it is super easy to get in enough veggies. :-) A light salad to accompany my roasted turkey wing, at dinner time, and everything should balance out nicely. I love this way of eating.:-) Oh well, back to the video; have a great day everyone. :-)

My friend expressed concern about my being on Atkins and not eating healthily, and having a doctor monitor my blood values etc. I told him I hadn't ever in my life eaten this many vegetables (and I am loving it by the way!!!), and I was really eating no more protein than usual. And no flour products, no sugar. I know I may be eating too much to lose much weight, or much quickly, but I'm enjoying this woe so much. I love vegetables. I am eating less calories than i used to, so stoll hoping for gradual weight loss. I do miss potatoes, limas, black beans, hummus, but hoping I can add them in later.

I agree with you about the veggies totally. After our dear buddy Gigi shared some ideas, I am hooked on adding them to everything. I love adding veggies to my scrambled eggs and absolutely adore chopped fresh spinach in them. A salad lunch tastes much better with the meat in it rather than along side it. I read your menus and suggestions often and discover new ways to fix a lot of the old favorites. Keep up the good work and especially, sharing what you are concocting for a scrumptious meal. Thanks.

Owsley, I miss the beans, and potatoes too, but losing the weight is more important to me than eating beans and potatoes. Like you, though I really wasn't keeping track, use to consume a lot more calories, and carbs, on a daily basis than I do now. I'm sure it use to be around 4000 calories, with several hundred grams of carbs being part of that total. I get in some beans, now and then, by using Eden Organic Black Soy Beans, in my chili con carne, and a serving of hummus, as a snack with some pork rinds, and cubed cheddar cheese; the individual servings of hummus are available at Costco, and yield about 5-6 net carbs per serving; so I don't eat it very often. I think the key is to document everything, in your food diary, and make adjustments as necessary. :-)

I ate really well this weekend, a little too well, so want to cool it a little on the calories and carbs this week.

Veggies are awesome! My mom has been quizzing me on the how to do low carb and its been taxing to go over it again and again what she can have and quantities and whatnot. She was complaining the other day about too much meat until I reminded her to have more veggies. There is a definite learning curve!
