Hello FS folks:
OH This was good. I have been making soso food lately - healthy but kinda boring. So, tonight I made Caramelized chicken in peanut sauce with endive/lettuce/onion/tomato salad. And I added a grilled Trader Joe tortilla coated in butter with a couple of strawberries.

There are many peanut sauce but this is from ruled.me and it is called Thai Style Low Carb Peanut Chicken. Plus they had great video too. Key is get a pot very hot before you put chicken in and dab away moisture so that it caramalizes and at the end at the peanut sauce. WALA.

I added some heat but not too much.And a touch of Stevia. Love that opposite flavor stuff: sweet bitter hot

Peanuts caramelized to chicken, never would have occured to me. Thanks for tips, and nudge to try for more interesting food. So bored with food, so tired. So freezer piled with already weighed and packed meal elements, which I just need to mix and match to make everything easier. What kind of hot sauce do you use?

In this recipe I used sirachi sauce but chili paste would work too.

TBU9- I too have a freezer full but I have to make fresh meals too - it breaks up the monotony. I try to do one new recipe a week.
