So long ago on this low carb discovery and I suppose yo-yo for me I realized that when I cut the carbs out a lot of joint aches and pains I had stopped. This was before I found out my cousin had celiac's disease. So as I would slip into old habits I would start feeling like I couldn't move as good because I was eating the carbs. Fast forward some years and I find out my cousin was diagnosed with celiac's which makes even more sense for me to have a gluten intolerance. This leads me to my post today. Yes, there are times when I am out and starving and nothing handy and my go to has been chicken tenders. Granted they are battered, but typically it is not a huge impact on my carbs. So last Thursday my friend wanted to meet up with us for dinner. I was going to be in town so we all decided to meet. It was Ezell's famous chicken and she said she heard they had good wings. Okay so we go there and EVERYTHING is battered. The lady tells us that they have a secret batter recipe yada yada. Anyway, I don't want to be like there is nothing I can eat here. Even though I should because seriously friends should understand when you tell them you can't eat something. I mean this same friend has diverticulitis and I don't eat popcorn in front of her....although she tends to eat it sometimes and then pays the price, but that is a different story. SO...I order the chicken tenders. They were okay, but I don't know what it is called Famous Chicken. Anyway, Friday morning I didn't feel great and I work from home so was bare foot but I could tell my hands were swollen some and my feet and I just didn't feel good. When I finished with work I went to put my tennis shoes on to go to the pharmacy and then get some treadmill time (was going to walk) and that is when I realized how much inflammation/water retention I had. My feet were so swollen that I had to loosen my shoe laces up to the point that I could barely have enough to tie them. My lower legs were so swollen that is why they were uncomfortable. I immediately took the shoes off, took my glass of water and went to the bed to elevate my feet over my heart. I stayed like this for three hours. I ate blueberries and watermelon for dinner (they are supposed to help recovery from gluten reaction). I have no idea what was in this batter, but it did a huge number on me. So although I am still trying to low carb it right now my focus is being more gluten free. This was a real eye opener to me as to how gluten can effect my body and how I have not been taking it completely serious. So time to get more serious about the gluten and hope everything else falls in line.
