Last of my salmon with sauteed cabbage and roasted beets. Remind me im not bleeding internally in the morning. ;)

1427 kcal Fat: 57.08g | Prot: 73.04g | Carb: 168.05g.   Breakfast: Fried Egg, Cooked Summer Squash (from Fresh), Cooked Okra (Fat Added in Cooking). Lunch: Cooked Green Cabbage (Fat Added in Cooking), Beets, Salmon, Sweet Cherries. Dinner: BBQ style beans and rice. Snacks/Other: Fresh & Easy Sugar Snap Peas, Hummus, Nectarines, Cashew Nuts. more...

I miss some root veggies. I am allergic to white potatoes, but I love a baked sweet potato. that's a holiday item for me.

That meal is beautiful!! Beets are so nutritious- too bad they have so much sugar- you can actually make refined table sugar just from beets. Why didn't Mother Nature create some low carb beets? 😀

Salmon and beets. It really is easy to eat healthily. i.e. If you really like these things like I do. Salmon is not the cheapest though.

I absolutely LOVE beets, fresh are best but I'll take them however I can get them! Of course, my German grandmother (who could make any vegetable fattening -- what she did with cucumbers was alto to die for) would only serve them with a sweet/sour kind of syrup -- similar to "Harvard beets."

Thanks everyone! Beets are new to my diet this year. I love them! I cut off the leaves and roast the roots whole in foil packets. Then I just peel and eat them. 😋
