I found them at Wal-mart, my boyfriend stood at the nuts with me for like 20 minutes reading the labels. I think I have him into the routine of looking at carbs now lol. He hasn't switched to low-carb but he does acknowledge my WOE even at the store and feels bad if we end up going down the cookie isle or something lol

He's a keeper! Very considerate boyfriend you have there. Going down the temptation aisles is something we have to face and defeat though. Avoidance isn't overcoming. Some days it's easier than others. Took me months to set foot into a Panera.

He said he felt bad but I told him it was ok, it doesn't bother me as much anymore. Although when I open the cinnamon bread my friend left here(I let my kids have some) I almost want to cry, it smells like cinnamon rolls and I really miss those...

Make a cinamon flax MIM with cream cheese sugar subsititue frosting. Won't be exactly the same, but close.

Well done Missy, some things we just can't change.....I know I cook dinner for my hubby there are just some things I want to pop into my mouth, but temptations just don't go away, they are around every corner.....you go girl you are doing a fantastic job........

Icy- I have only made one flax MIM and I think it was too much fiber for me in one shot is there a recipe for one without so much flax? Also I don't know how to make a cream cheese frosting...

Yvonne- Thank you, I haven't even gave into the temptation of eating my low-carb ice cream I bought for my MIL birthday...it's weird that I don't want to just eat them up.

Karen- The brand is World Table and the ingredients are only shelled pumpkin seeds with peanut oil and sea salt, and they aren't very salty either only 70mg of sodium per serving. Good luck finding them, they are a very yummy snack :)

Missy maybe later on in your journey you can buy almond meal instead of Flaxmeal or do 1/2 flax 1/2 almond meal. Cream cheese frosting can be just creamcheese sweetened with splenda or other sugar substitute.

If you use the coconut flour you have to have more moisture. I've tried to use it twice and wind up with a dry lump that looks like clay. I still have no idea what to do with the rest of my coconut flour.

There is a site that this lady has tons of low carb recipes for coconut flour for cookies and stuff like that...even biscuits

I'll have to check that out. I've looked at other recipes for coconut flour, but the always seem to have other items that aren't low carb.

All of her stuff is low carb recipes from what I could tell, yes most is goodies but I think that is kinda the point of her blog, but I plan to use it when the holidays come. She's got a zucchini bread recipe too :)

Ohh zucchini bread...yum. This will be good cause I usually bake for xmas instead of buying presents. Be nice if I can bake things I can actually eat too!

Let me know what you think of the site :) It's one I heard of from someone at the Atkins site. I have made the coconut flour pancakes...well my BF has and he has also turned them into waffles for me. We have done the biscuits as well :D
