I had a small bowl of granola for breakfast yesterday (3/8) and an apple only for lunch, and 3 chicken tacos (corn tortillas) for dinner. I even treated myself to a small piece of homemade apple spice cake and overall limited my calorie count (RDI) in the 40-50% range.
I'm proud of myself but I am concerned about whether I can sustain the one piece of fruit at lunch routinely during the week. The funny thing is that I was able to make it through the day and feel quite satisfied w/ the one piece of fruit. I ate the apple while taking a 25 minute walk in downtown SF. It's interesting how the body can survive with minimal calories if need be. I think as a society we are trained to believe we have to have 3 square meals/day and that simply isn't true.
The challenge will come today since I am working from home and I have food within arm's reach. I am going to see if I can make do with just that apple for lunch, but we'll see.
