I think I am really coming to a good place about food after all these years. Of course, the fact that I have had to completely upend my diet thanks to IBS, and that I've managed to stick to FODMAP, has helped a lot. My tastes have changed so much since I've been doing FODMAP. When I'm feeling really hungry, I think about a nice chunk of lactose-free cheese or a Luna Protein Bar, or some protein dense item, or if I want crunchy, I go for carrots or buckwheat crispbread. I don't miss baked goods the way I did at first, and I'm doing OK with only having ice cream when I have the time to make it myself. I really look forward to my buckwheat pancakes and gluten-free fruit crisps. The point is, I think I'm finding a way to not be on a diet all the time, but to eat in a way that controls my weight but doesn't make me feel deprived all the time. I realize that the trip to France was a real test and a tremendous achievement -- it would have been so easy to fall off the wagon in France, but I didn't. The desire NOT to be sick was stronger than the desire for a chocolate croissant. I hope it's going to pay off in the long run.
