Three days in a row of elliptical exercise! Yea!!I had to get up early this morning in order to fit it in, but I did it! This morning after exercising I took a quick shower and then met a former co-worker at Panera Bread for breakfast. They built that restaurant last fall. It is about 3 miles from my house and I pass by it every time I go into town, but this is the first time I've eaten there. I got steel-cut oatmeal with strawberries and pecans. I was impressed with their menu. Everything had the calorie count right next to it up on the wall. So easy to make a healthy choice! I thought it was a little pricey, but I don't do it all the time so I felt I could indulge.
Tonight I made an Italian pasta salad using Bertoli's Protein Plus rigatoni. I cut up lots and lots of veggies and made a homemade dressing with olive oil and white wine vinegar and some spices. It has been so long since I've had pasta...it tasted great! I had planned to have it as a side dish with pork chops, but GoodMan had enjoyed some blueberry bread pudding (I avoided THAT like the plague) so he wasn't super hungry. We decided just to have a bowl of pasta and call it dinner...I LOVE being flexible like that with our meals. When I have more family around I'm always cooking.
When I'm done here I plan to go into the basement and clean out a storage room. We are gutting the storage room and what used to be the laundry room and turning them into two guest bedrooms. We put an egress window into one room and plan to put a wall with a pocket door separating the two rooms so anyone in the second room could go through the pocket door to the egress window in case of a fire. Both rooms will be small - just big enough for a queen bed and enough room for a nightstand and maybe a small chair. But these rooms will only be used when our kids come home on weekends or holidays...no one will actually LIVE there. When we are all done our 2-bedroom 2-bathroom log cabin will have 6 bedrooms (5 guestrooms of various sizes and the master bedroom) and three full bathrooms (the master bathroom and a full bath on each floor for the guestrooms). We have 5 sons and their families, so now at least every couple will have a guestroom. The grandkids can either sleep with their parents (in the bigger guestrooms) or sleep on air mattresses in the great room. It is always a project trying to figure out how to fit everyone in when you have 28-30 people staying over.
