ATTACK OF THE VEGGIES...

they havent attacked much but when they do they are starting to taste better...

i made an everything but lettuce salad...it had fresh from the garden, still warm tomatoes (yellow), cucumber, celery, banana peppers...not from the garden, craisens and almond slivers - maplefarms has a no sugar added italian dressing that is made with splenda...very good...
we had that with a crab dip that i got from imluuvd on toasted chips...

the other one is a tomoato stuffed pepper...purple peppers from the garden stuffed with tomato quarters, fresh basil, goat cheese adn a little evoo...baked at 350 - also very good...nxt time will put some egg plant cubes in them and serve on rice for a full dinner instead of side dish...

on a sad note...i had to put my niece (read puppy doggie) down yesterday night...was supposed to be "off" all weekend...ended up spending 7 hours on saturday at the vet, learning that simon had lymphoma and kidney failure...took her home on iv drip and on monday afterwork went and had to do the deed...not a great day...also on the way home on saturday - im within 1 mile of the house and i witness an auto accident...yuk...

so by way of explaination, im sorry i missed your journals and havent been around much...my mind has not been very positive the last couple of days...sorry...

That is so hard having to put a pet down but you did as much as you could for Simon. Never apologize for not checking into our journals, we all understand life happens and we all get busy ourselves. Glad you are in a positive frame of mind.

Your veggie dishes sound so tasty! Glad you found veggies and recipes that you like. So sorry to hear about Simon. :( It's very difficult and sad to have to put a pet down.
