I recently got a spiralizer. I haven't had many opportunities to put it to use yet, but I was so glad I thought of it at lunch today. I found some chicken curry in the freezer which I would normally eat with noodles. I had the great idea of making zucchini "noodles" instead. I simmered them in the curry for a few minutes and it turned out great.
I am sometimes just impressed by how far I have come. I not only found a way to work a veggie into my lunch, but I really enjoyed eating it. I think about myself only a few short months ago, and that sort of idea would have never even entered my mind. (Nor would I probably have had a good stock of vegetables to choose from if I had thought about it!)
Anyone out there have any inspired spiralized foods they love?

My favorite is zucchini noodles with diced tomatoes and garlic. My second fave is sweet potato noodle cake fried in olive oil topped with sea salt.

Thanks for the suggestions. Both sound good, especially the sweet potato noodle cake. I tried some sweet potato noodles sauteed with spinach and garlic, but I kind of cooked it all to mush. :P I also cut up some apples that my daughter mixed with peanut butter--it looked sort of like vomit, but she loved it. :)

Laverntisdale, a spiralizer is a kitchen gadget that cuts vegetables in a spiral. The different blades let you cut ribbons or curly fries, or noodles. I am just trying to figure out what to do with it.
