Struggling to keep my calories and fat up and not exceed my carbs. Finding it most difficult. Even put whipped cream in my coffee this morning and having cheese sauce on my veggies and that didn't do much either to boost either fat or calories.

I'm familiar with the list of veggies, my issue is I only can eat certain veggies. I can't eat/actively hate tomotoes, onions, or peppers, beets, radishes (anything spicy or hot) and veggies aren't fat and calorie laden.

What veggies can you eat? I rarely eat a veggie if it isn't dipped in ranch, or cooked in butter.

Your protein is a bit low, so if you get that into range with fattier selections of beef, skin-on chicken, etc. that will increase both calories and fat without jeopardizing your carb count. As you progress through the phases of Atkins, there may come a time when you'll be changing to leaner selections, but for now, this should do the trick for you.

ok how about salads, celery, cucumbers, mushrooms, asperagus, avacadoes, broccoli, cauliflower, olives, pumpkin, eggplant, spinach, summer squash, zucchini, turnips, rutaba, water chestnuts all excelent possibles. LOL then again, there may be some creative ways to make a ranch dressing that is Atkins approved????? get creative. you want fat think bacon, sausage, steak and eggs and not that fake stuff either. I will say ya gotta have those foundation vegies 12-15 net carbs or you will stall out. oh Butter is good!!!! lots of fat!

Broccoli, cauliflower, green beans, sugar snap peas, snow peas, sprouts (all kinds) getting tired of lettuce (iceberg, romaine) and carrots. I like cucumbers, however they make me burp for 24 hours after eating just a few slices. Course I like peas and corn and pototoes too, but they are high carb, so I've only recently allowed myself a bit of corn, and I think my stall might have been caused by corn on the cob 2 days in a row.

Ah yes, I forgot, Thanks thersmith, zuchinni, mushrooms and yellow squash is good too. I eat aspargus, but not often, as it is so strong a flavor. Have to try water chestnuts, i like those too. I get leery of ranch (i love it) but it has 2 carbs just for 2 tablespoons. I put a pat of butter on all veggies, but my diet calendar still shows too few calories most days. I'm not the shopper, so I ask for bacon, but don't get it. I could eat bacon daily, but it's so expensive.

One word ALDI you can bacon for $2 same with sausage. get the recipie for MIM's. Also try to eat 4oz of protien each meal. thats like a can of tuna, chicken breast or a couple of legs, hamberger with out the bun just put lettuce on either side, Pork chops from Aldi are darn good. And last but least EGGS!!!!! fried, boiled, deveiled, you name it are great!

Sandy, fatty meats is a good suggestion, maybe I can get my mom to buy some corned beef and cook that with cabbage, that's fatty right?

What is Aldi? If it's a store, it isn't in my town. I do have a MIM, maybe once a month, but I feel like Its bad cause it's bready and not veggies...I do eat protein for lunch and dinner, breakfast is difficult cause my stomach takes about 2-3 hours after waking before it will accept food, by that time, i'm at work, so it's usually an atkins shake, maybe 2-3 times a month i'll stop at a breakfast buffet for eggs and bacon...

I think corned beef is a processed meat which COULD cause problems due to the processing and nitrates/nitrites, not to mention the potential for added sugar. What about just a low grade beef roast that can be seasoned and roasted? Fat on those roasts is not a problem and usually the lower grade roasts are not all that expensive (compared to steaks).

Yes Aldi is a store bummer. MIMs are approved and totally aceptable. and only 2 carbs and excelent for you. great sorce of protien and fats. eat them every day they will keep you in tip top shape

The trick with that is getting my mother (who is the shopper) to lower her standard to buy low grade meats. She buys lean and organic foods. out of 5 people at my house, i'm the only one eating high fat...Besides butter and cheese, what else it low carb and fatty?

Will she buy real mayo? That definitely adds quite a bit of fat in rather small quantities. Put a layer on some cheese then wrap it in turkey or roast beef. Make egg salad or tuna salad or chicken salad. It's pretty easy to throw in a container and eat on the go too.

Would she buy organic chicken WITH skin? I think there are some fish that are higher in fat, as well, but I don't remember the best ones in that regard; you'd have to research that a bit. Nuts and nut butters are also higher in calories (per volume) and will give you some additional protein, although they will also add a small amount of carbs; just depends on how much room you have for carbs on a given day.

Thank you all for the advice. I'm gonna have to start making chicken/egg/tuna salads for lunches instead of salads (which I'm burned out on) and try to eat a MIM at least twice a week. I'll get eat a carrot or two for the veggie with the salads.

Don't be afraid of consuming the MiM's more regularly. They are made from flax meal and not white or wheat flour-so they are low in carbs and an excellent source of fiber. You can also make pancakes using flax meal, eggs, cinnamon, vanilla, cream cheese and baking powder. Top 'em off with sugar-free syrup or whipping cream (made from cream). Also, I recommend you prep a dozen or so deviled eggs - great source to snack on so you can up your healthy fats and calories. My favorite thing to do for lunch is make tuna/chicken/salmon salad using mayo, mustard, onions and s-f relish - and I put it on flax bread I make (using the MiM recipe but putting the dough in a bowl instead of a mug. I comes out flat and round and I cut it in half for a nice sandwich.) Not sure if you are following OWL or Induction; but carrot is not the veggie of choic as it is higher in sugars and will make your glucose spike, kicking you out of ketosis. That should be a food you add later on in the OWL stage, choosing other veggies that are more agreeable to WL. Best wishes!! = )

it's hard for people not into the low carb diet to not buy low fat and lean items cause we are trained to think that is the best. Add a mom feeding her kid dynamic to that and it's triple-hard! Can you toss your salad veggies with a good oil like organic olive oil or something mb less flavorful and then add some dressing that has a few carbs? I also take organic flax seed oil every day jsut a tablespoon like medicine (not to enjoy w food) I'm an organic mamma and I know I would have been thrilled to buy organic omega 3 flax seed oil for my babies if they were into it. Also u can get nitrite free bacon at Trader Joes (didn't look to see where you are geographically) for I think 3.99 for 12oz ok now that is not cheap per se... but if it's just u eating it and you cook 1 or 2 pieces and then cook your eggs or mushrooms or veggies int he bacon fat then it'll up yr fat also and I think there are at least 10 slices in there nice thick bacon (that's 5 meals if u do the 2 slices per meal). Lots of salt in bacon mb yr mom is worried about salt also. Can you give her your list of foods that are good for your diet and your target amts of fat/protein? My friend gave me the Gary Taubes book 'Why we are fat and what we can do about it' (or title is close to that) and I shared it with my (now grown) kids and it helped explain what I was doing. It's hard to just explain to people cause it's simple but there is enuf against what we've been told forever that it's hard for them to accept. I find myself skimping on salad dressing that is 0 carbs and then I'm like... WTF Anna! and I read the stuff and have been doing this for a few mos.
