Happy Halloween Eve!

I just finished 82 minutes (20.6 miles) on my exercise bike and am about to head to the showers. I have another busy day planned (aren't they all). We have the whole family coming this weekend so I have a lot of grocery shopping to do along with preparing guest rooms and blowing up air mattresses.

When the whole family is here the head count is 28 people and at least 3 dogs. In order to fit everyone in we have to totally rearrange all the furniture. The guys are used to it now and have it down to a science. My house gets rearranged in about 3 minutes with 5 or 6 men working together. The air mattresses (for the grands to sleep on) take a while it pump up and I always have to get creative for ways to get them out of the way - otherwise they are too big a temptation for the kids to jump on them and pop them. I also have the complication of putting away my collection of chiming clocks...We have two autistic grandsons and the clocks are too big a temptation for them. They can't keep their hands off them and are always trying to take them apart! LOL! One of my German Cuckoo clocks was broken the last time they were here and I haven't had the chance to take it to the Amish clock repair man to get it fixed.

As far as meal planning for the weekend...I've decided to order two 6-foot subs from Walmart for lunch on Saturday. Either I'll have a small piece, or I'll have something else just for me. And then for dinner I plan to make three kinds of soup - chili, chicken noodle, and broccoli cheese soup. I should be able to stay within my RDI with those choices and I think it will satisfy my family too. I plan to make a sheet of frosted brownies (I don't really like chocolate so they don't tempt me too much) and a pan of Apple Crisp for dessert. Those choices are relatively harmless for me - now anything with peanut butter would be another story all together!

While the family is here there will be a lot of foods available that are not consistent with my new lifestyle. When everyone leaves on Sunday afternoon I plan to put everything on our large table along with to-go containers and have them take everything leftover with them. Anything left will go to feed DS#6's pigs. That way I'll start out Monday back in new lifestyle mode.

Grocery shopping - done Guest rooms put together - done Air Mattresses filled - tomorrow Clocks put away - tomorrow ...doesn't seem like a lot, but I've been on the go all day! ***Update on the Quinoa Enchilada Casserole*** not a hit with us. Didn't really seam like a meal, more like a dip you might have with chips at a tailgate party.
