Some of you asked for my low-fat macaroni & cheese recipe ... here it is ...

From Butter Busters The Cookbook

Your Basic Macaroni & Cheese

3 TBSPS liquid Butter Buds
1 1/2 to 2 Tbsp flour
1/2 tsp. lite salt (optional)
1/2 tsp. pepper
2 cups skim milk
1 Tbs. liquid Butter Buds
2 cups elbow or shell macaroni, cooked
1 Tbsp. grated onion (optional)
1/2 tsp. lite salt (optional)
1/4 - 1/2 tsp. pepper
2 cups grated non-fat cheddar cheese
1/2 cup crushed Pepperidge Farm seasoned cubed style stuffing

Prepare white sauce by combining Butter Buds, flour, sal, pepper, and slowly adding skim milk. Stir with a wire whisk until smooth and thickened. Set aside. Place half of the cooked macaroni in the bottom of a 2 qt. glass casserole dish, that has been sprayed with a non-fat cooking spray. Sprinkle with half of the onion, salt, pepper, and cheese. Repeat. Pour sauce over the casserole. Drizzle 1 Tbs. liquid Butter Buds over the top.

Sprinkle remaining cheeses over this. Sprinkle crushed stuffing cubes on top. Cover and bake for 30 minutes at 350 degrees. Uncover and bake 10 minutes longer.

LOL Stef ... low carb has NEVER worked for me!!! Therefore I don't have low-carb recipes!! I actually gained weight on Atkins!! Probably all the damn cheese I ate. I attend cheese-anonymous meetings.

Sounds yummy - what are stuffing cubes? I don't think we have them in the UK.

Basically stuffing cubes are just the bread you would use to make stuffing for a turkey, chicken, whatever.

Very kind of you to offer your comfort food macaroni and cheese recipe as I definitely will make this for my family. Sounds yummy and I love the fact that it is only 84 calories per serving. Absolutely cool. TOWANDA!!!
