Pimped M&S ready meal #2:
Beef and red wine casserole. With added: Sugarsnap Peas, broccoli, carrots and Roast Butternut squash (yea I don't vary my veggies a lot).
Not as successful as the Pork Loin, but it was my own fault. I should have checked the seasoning of the casserole. It needed salt and lots of pepper & maybe a touch of chilli to be added to it (and I'm not a huge fan of seasoning when it's on my plate).
The sauce over the Pork was sweet and sour from the apples and cider so didn't require anything else.
And if I had had them I might have dry fried some mushrooms to add just to bulk it out a bit more with something meaty-ish...
