l had a nice healthy dinner tonight. Yesterday I roasted a butternit squash, some turns & several Nantes carrots, which I added a couple tablespoons of olive oil to, as well as some rosemary. I roasted them for about 40 minutes at 375 degrees until they were tender. I got them out of the fridge today, put them into a saucepan with about 2 cups of chicken broth & simmered them for about 45 minutes while l did my workout.
At dinnertime, l took some garlic, ginger, onion powder, a bit of cayenne, a bit of smoked paprika....mashed it all togther, donned it into a bowl, added a dollop of light sour cream. Yum!
