Cooking is so much fun!

I might've mentioned but I went to the local farmer's market over the weekend. I live in the agricultural area of my state so there's a lot of great fresh produce this time of year. I ended up picking up a ridiculous amount of tomatoes and tried my hand last night at making sauce from scratch. Now, I have made sauce before, but I normally start from a can so the starting from diced tomatoes thing was weird. Also, good to note that five tomatoes don't yield a lot of sauce. The sauce really turned out good and I put it in the fridge overnight because I was craving eggplant parm (I bought an eggplant for JUST that purpose.)

I grilled it on the foreman grill tonight, then threw it in the oven with the sauce I made last night on top and part skim cheese and damn, it's really really good. I was surprised I could actually make great eggplant parm without a recipe.

There's something psychologically good about eating fresh things. I can't explain it. It just feels so much better. I'm so low on calories for today and I went to the gym earlier so I might just finish the whole thing off. (It wasn't a big eggplant.)

Btw, if you use pre-made sauce I'm betting the whole thing probably takes 30 minutes to make including prep time.

I had some organically grown tomatoes this weekend and was thinking that exact same. There is something about eating fresh that does make one feel pretty darn good. I agree, Wow, your dish looks amazing. I need to try your recipe for sure. TOWANDA!!

The nice thing too is that everything's grown locally (I seriously live in the middle of farmland) that's sold at this farmer's market so I feel like I'm also helping keep my neighbors afloat and helping the environment. I might've went a little overboard on the cheese but I don't eat a lot during the day at work.

That is such a blessing wowie, the bounty is yours for the taking if you accept to choose such wonderful foods of the earth! Last night I had black eyed peas that were fresh and just loved them! We have such good abundance in our life and are lucky we have Mother Nature on our side as we give up on the processed food companies. TOWANDA!!

So true! I found a local dairy (next to the farmer's market) that also does hormone free milk (basically organic but not officially certified) but CHEAPER than the local grocery store as it's all from local dairies. I'm determined to try to eat real food at least once a day, instead of chemical crap.

:) May I have a glass of Charles Shaw Merlot, please? Having just bought a Vita-Mix, I think my husband will kill me if I buy a George Foreman grill, but I like the idea of grilling eggplant on it. We both love eggplant! Lucky you, having all that yummy fresh stuff around you,
